I've been playing lately Black Desert Online.
If you like MMOs, it's a very interesting one.

It has the most complex, deep and interesting supporting systems I have ever seen in a WoW like mmo.

You hire workers to gather resources, invest in buildings, build ships and wagons, process materials, breed horses. Game has solid economy (almost everything sells and very quickly at that). Trading is an actual profession in this game.
Also theres weekly small updates (no joke).

It's Korean mmo, so a big grinder with focus on pvp.
Still, solid game.

But if it's not, then my all-time favourite game is Subnautica. Gorgeous graphics even at minimum, it has all the traits of an AAA game, except one - its price. (also there are some minor bugs and glitches here and there but nothing game-breaking and you won't encounter them very often).
